Grilled nectarine salad with lemon-ginger dressing
There is a perfect summer salad for every occasion. This green salad with tasty grilled nectarine, strawberries, savory nut crumble, feta cheese and a fresh lemon ginger dressing will sweep you off your feet. This outstanding salad will fit perfectly any barbecue.

Lemon ginger dressing
- 1,5 dl Fazer Aito Oat Cuisine
- 2 tbsp lemon juice
- 1,5 tsp powdered ginger
- 0,5 tsp sugar
- 0,5 tsp salt
Savory nut crumble
- 0,5 tbsp butter or margarine
- 1 dl chopped almonds and sunflower seeds or other nuts and seeds
- 1/2 tsp onion powder
- ¼ tsp salt
- 6 nectarines
- Two bunches of salad such as Cosmopolitan or Romaine
- One bunch of other greens such as dandelion or baby spinach leaves
- ~100 g fresh strawberries
- ~1 dl (vegan) crumbled feta
- ~ 1 dl basil leaves
Mix the salad ingredients first and let the dressing cool in the refrigerator while you prepare the salad.
Toast the chopped almonds and sunflower seeds in butter or margarine for a couple of minutes stirring constantly. Add onion powder and salt, mix and pour into a plate to cool.
Chop nectarines into 4 pieces. The harded the nectarine is, the easier it is to grill and it won’t become too soft. Grill the nectarine pieces on the hot grill on each side until it has browned.
Assemble the salad by first tearing large green leaves on a serving platter, then the smaller greens and sprouts. Sprinkle the dressing generously on top of the greens. Add grilled nectarines, strawberries, nut crumble, feta and basil leaves.
Serve the extra dressing and nut crumble with the salad.
